Selectable recipient with pipes in [SELECT] stopped working

I recently noticed that the select dropdowns in my forms are not sending the correct values. I have been using this feature extensively in my forms, allowing me to send different values than what is displayed to the user. This was working perfectly until the recent updates.

For example, in the form located at https://qualified-shark-fbd5ec.instawp.xyz/sample-page/, I have a select dropdown that should send different values than what is displayed to the user. However, upon testing, it appears that the form is only sending the display values instead of the intended ones.

Here is an example of how I have structured the select dropdown in my form (taken from the cf7 docs):

To further investigate this issue, I have created a sandboxed environment with the default template and no other plugins. I found that the issue persists even in this minimal setup, which leads me to believe that it might be related to a recent update in Contact Form 7.
