How to force From Email in V2.0+

In FluentSMTP v2.0, an update has been made to freely use any From Email that is set within a specific plugin. Is there a way to override this change and force the From Email . Use case: in WordPress multisite, I want to allow each site to send emails from a specific email and do not allow it to use other email addresses that are available for other sites.
