category confusion | WordPress.org

I have kadence used with Woo-commerce.  I have my products in two main types of products:  ‘the clays’ and ‘everything else’.    If in the menu ‘shop’ is clicked it shows these two categories.  However if one then clicks say ‘the clays’ it shows all the products in the clays category.   (There  will be hundreds of them! ) 

I want the click for ‘the clays’ to then show the sub categories i.e the 8 types of clay – and from there their sub categories and thence to the clays.  I have obviously not understood how to set up the two main types of products.   Would someone explain to me what I should do differently>
